Were looking for a talented and driven Sous Chef to join the team at Oban Brasserie, located within Perle Oban Hotel. This is a fantastic opportunity for a Sous Chef, or a strong Junior Sous ready to step up, to take on a key leadership role in a busy, quality-led kitchen. Working closely with the Head Chef, youll help lead the team, drive standards, and play a central role in delivering consistently excellent food. If you enjoy being at the heart of service, developing others, and working with fresh, seasonal Scottish produce, this role offers both challenge and progression. About Oban Brasserie Oban Brasserie offers a relaxed yet refined dining experience, showcasing the best of Scotlands larder. Our menus focus on fresh seafood, Highland produce, and approachable, well-executed dishes. As a busy hotel restaurant, we deliver high-volume service without compromising on quality, making organisation, teamwork, and consistency key. What Youll Be Doing Supporting the Head Chef in the day-to-day running of the kitchen
Leading service from the pass and on section both during dinner and breakfast service
Coaching and developing junior chefs
Ensuring consistency, quality, and pace across every service
Supporting stock control, ordering, and kitchen organisation
Maintaining high standards of food safety and hygiene
Deputising for the Head Chef when required
What Were Looking For Experience as a Sous Chef or strong Junior Sous in a busy, quality-led kitchen
A calm, organised, and hands-on approach during service
Passion for fresh, seasonal produce
Good understanding of kitchen operations, prep, and service flow
Strong communication and a team-focused mindset
Ambition to progress and take on more responsibility
What Youll Get £35,000 salary (depending on experience)
Performance-based bonus
Share of tips & service charge
